Dry Ban Mian

Today, I decided to cook dry ban mian (noodles) as the best dry ban mian stall I tried so far is at Pasir Ris. So, I eat that quite often. Its along Pasir Ris Drive 6, at block 440(the corner old coffeeshop just after the wet market, beside sea shell park). Its so yummy...

So, thought of trying it out myself. First, I had to poach the egg. Its quite a technique to cook poached egg as its not easy getting the egg white together. So what I have learnt from Gordon Ramsey is that you need to stir the hot water in one direction first before placing the raw egg inside so that the egg white will curl by itself.



So this is my first time poaching the egg and glad it turned out alright.

Then I cooked the noodles and on a separate pot, I made the sauce with minced pork, crab meat, veggies. I added XO Scallop sauce to this to make it fragrant. All in all, the outcome was good but I found the sauce too watery. Will reduce it next time round.





Love the runny egg yolk! I know I am not supposed to eat by some people as uncooked stuff leads to more chances of getting food poisoning and all. But oh well...(no comments)
