Today, Vicky cooked a filipino dish from the recipe book which I borrowed from the library.
Ingredients used:
1 head garlic, cloves peeled and crushed
250 ml of 7-Up or Sprite
100g brown sugar
1 kg pork belly, sliced lengthwise about 2 cm wide
Dip
1 head garlic, peeled and crushed
250 ml vinegar-- I used less for this as I didnt want too sourish
125 ml soy suce
freshly ground pepper
1) Combine the garlic, 7-Up or Spirte and brown sugar in bowl. Add the pork, stir and marinate for 2-4 hours
2) When ready to cook, drain pork and discard the marinade. Heat grill to medium and grill pork, turning occasionally until throughly cooked
3) To make dip, combine all ingredients (I added cut chilli for a little spice)
This dish is best eaten with white rice. The taste was very good but the only downside was that it was too chewy and the skin was too tough. Sigh.
