Lions Club 20th Anniversary gala dinner

Today was a very busy day for me though the students were not around. Its moderation day today where we determine who promotes and who doesnt based on their overall results. Was in school from 1030am all the way to about 3 plus pm. I was rushing my lunch in between. Sat in for the Sec 2 and Sec 3 moderation. Sec 2 because of IPW (Inter-disciplinary Project Work) which I am assisting the one in charge.

I was very busy the whole day because tomorrow, I am on child care leave. Taking Caleb for his vaccination since he is already 3 months old. Its the polio jab. So, I had to rush out a lot of work as the deadline was tomorrow. I was asked to complete next year's IPW Handbook by tomorrow as during the post exam activities next week, there will be an IPW briefing to the Sec 1 students as they will be going on to Sec 2 next year.

So, after the moderation, I rushed home to start drawing out designs for the IPW Handbook coverpage. Here's the one I did last year..




After planning for about half an hour, I went to take my shower, dressed up and drove to Kembangan MRT Station to pick CT up from work. Then he dropped me off at my parent's place in Siglap as he headed back home.

I had a dinner appointment with my dad alone at Conrad Centennial International Hotel for the Lions Club 20th Anniversary Gala Dinner for Bedok District. My dad has been in Lions Club since 1998 and he was also once the president of Lions Club. My mum wasnt free to go with him as she had to go church to facilitate in bible study. So, I had to go with my dad as I drove the van, bring him down from the van and have dinner with him and his friends who were on average in their 50s.

I have to say that Conrad Hotel has excellent service. As I parked my van in front of the entrance in the reserved lot, the doorman actually helped wheeled my dad all the way to the ballroom which was on the 2nd floor. After that, my dad's friend Ken Joo took over and wheeled him. I am really proud of my dad as many came forward to shake hands with him and some even told me about how proud I should be with a dad I have. Yes, I am very proud of my dad as I saw tonight how many of his friends all respect him and help him out.

The dinner tonight had 300 over people dressed formally in suit and tie or gowns- 31 tables in total. Very nice ballroom with great food! (especially since it was cooked by the executive chef of Golden Peony Restaurant, one of the top restaurants in Singapore)

Here is tonight's dinner menu..



Dish 1 - Scallop wrapped in crispy filo dough, sliced mango duck, deep fried prawn with banana and honeydew



Dish 2 - Double boiled sea whelk soup with cabbage and chicken soup (a very nice clear soup. If you are wondering what whelk is, it is a kind of seashell)

Dish 3 - Sauteed prawn with dried red chilli served in taro nest (a very tasty dish with succulent prawns)



Dish 4- Pan fried chicken with wild mushrooms and lemon grass served with crispy bun
(This dish was wild mushrooms wrapped in chicken and the chicken was wrapped in bacon strip. Very exquisite)

Dish 5- Steamed fillet of sea bass with minced garlic



Dish 6- Braised Chinese mushroom with spinach and conpoy (Conpoy is actually dried scallops)

Dish 7- Steamed fragrant rice with prawn and conpoy (This dish is wrapped in lotus leaf)

Dish 8- Chilled Aloe Vera with lemon grass jelly (I enjoyed this dessert so much because of how refreshing it was. There were even chunks of mango and strawberries inside. Great ending to a wonderful dinner)


Aside from the yummy food, there was also great entertainment from various singers. I especially like this duo who was singing oldies with one acoustic guitar and the other, playing an electric guitar. First of all, I love oldies. It is the best kind of music I can listen to any time of the day.

You see, for me, certain types of genre of music is listened best at certain times of the day. For e.g, when listening to jazz or classical, I love to do it at night in the stillness and comfort of my room or during rainy nights. When listening to pop music, I like it when I am in the car as I drive so that I can sing along and all. But when it comes to oldies, I love to listen to them any time of the day. Of course the ideal situation is when I drive a convertible, travelling on a highway and blasting my oldies.

Anyway back to the celebration, I did enjoy myself as I converse with my dad's friends, good food and music. Few days back, I was actually praying for this day that I would enjoy myself and have a safe trip as I drive the van and handle my dad all by myself. Glad everything went smoothly. Really admire my mum who chauffeurs my dad everyday around for physio, to church and other outings.

Reached home close to midnight. Very tired but couldnt sleep. (hmm..does it make sense?) So anyway, went to my study room and did my IPW work until 2am.

Finished the coverpage. Came out with 2 designs. Here is one of the designs. Went for a simple look this year..(you are among the first to see this since it has not been sent for mass printing yet)
